Guests pay by card through Stripe. For booking requests, the card is only held until you accept, and captured once you do.

Yes. Set your property to booking requests and nothing is confirmed or charged until you accept.

Can I keep listing elsewhere?

Yes. Import your other calendars via iCal so dates blocked on other platforms are blocked here too.
